The 2016 Chablis 1Er Cru Vaillons comes from 3.5 hectares split over ten parcels in the heart of the premier cru. It has an attractive bouquet with scents of lime flower and wet granite. The palate is rounded and more supple than the Montmains, crisp and precise with lime and Granny Smith apple toward the finish. Fine.
Fresh and tangy, this white evokes mineral notes along with apple and lemon flavors. A touch of herbs chimes in on the lingering finish. Drink now through 2021. 150 cases imported
Lovely fresh apple fruit with punchy acid and full body – gets all the flavour of premier cru without losing the classic cool-climate structure. Lovely flinty element to the finish with a touch of hard cheese too. Delicious.
Histoire du domaine
Le Domaine William Fèvre a su se hisser au sommet de l'appellation depuis sa création en 1959 par William Fèvre. Cet artisan du renouveau chablisien débuta avec les sept hectares familiaux pour atteindre 80 hectares aujourd'hui, dont 16 en grands crus ; une palette impressionnante de prestigieux terroirs de Chablis !
Acquis par la Maison Bouchard Père & Fils en 1998, c'est Didier Seguier qui en a pris les commandes. Priorité à la limitation des rendements, approche biologique, et même biodynamique depuis 2010, la diversité des terroirs est remarquablement mise en valeur. Des Chablis très purs, ciselés alliant fraîcheur et minéralité.
