The 2016 Corton Grand Cru, which comes from Les Combes, had a sultry bouquet of mulberry and blackberry, nicely defined but introspective at the moment. The palate is smooth and harmonious, sweet and ripe with a grainy texture and notes of blood orange complementing the red fruit toward the structured and persistence finish. This is very classy, voluminous and with very satisfying purity from start to finish. A splendid Corton from l'equipe Tollot-Beaut.
Copious amounts of wood and menthol elements fight somewhat with the otherwise ultra-fresh red berry fruit aromas that are liberally laced with earth. The agreeably textured yet muscular and powerful big-bodied flavors possess fine depth on the equally firm, serious and youthfully austere finish where the wood resurfaces. This is currently somewhat awkward and will need a few years to harmonize as well as more completely absorb the oak treatment.
A sumptuous, detailed red, featuring black cherry, blackberry, violet, sandalwood and baking spice aromas and flavors. This all hangs together beautifully, though it will be even better when the firm, dusty tannins have been absorbed.

Le domaine Tollot-Beaut est situé à Chorey-les-Beaune. L'arrière grand père Tollot, ancien maire de la commune lui a donné son nom. Aujourd'hui, les 3 cousins germains Nathalie, Jean-Paul et Olivier gèrent le domaine qui s'étend de Chorey-les-Beaune à Corton en passant par Savigny-les-Beaune (soit 24 hectares au total).
Les vins du domaine sont conçus avec la volonté d'exprimer la complexité de la Bourgogne, grâce à des vins alliant élégance et puissance, équilibre et pureté. C'est pourquoi la vigne est traditionnellement labourée pour aérer le sol et ainsi activer la vie microbienne. Aucun apport d'engrais n'est pratiqué de façon à limiter la croissance des rameaux et ainsi concentrer les arômes et saveurs au cœur du fruit.
Le domaine réalise également une vendange en vert, ce qui permet de maîtriser les rendements et avoir une meilleure maturité des raisins restants. Le vin en est plus riche et concentré.
